Homemade – Brown Sugar Bacon
Jessica | August 26, 2009I revisited West Egg Cafe the weekend I moved back to Atlanta with my family and Mario and tried one of their specials, the Peachtree Plate. The standout of the meal was the brown sugar bacon, a mix of sweet and salty that left me (and Mario) wanting more. So, I found some recipes via web search and cooked up my own batch.

Homemade Breakfast
Making brown sugar bacon basically involves sprinkling a desired amount of brown sugar over bacon strips and baking (in this case, 350F for about 25 min). Line your baking pan with foil for easy clean up, and allow the bacon strips to overlap slightly. Recipes I found called for anywhere from 1/4 c. to 1-1/2 cups of brown sugar, so I just eyeballed what I thought was a good amount of coverage (which was probably closer to 1/4 c.). I actually made batches both Saturday and Sunday morning; the first time pressing the brown sugar into the bacon, and the second time just sprinkling it over the top. I didn’t notice much of a difference between the final products, so I’d go with sprinkling as it’s less time consuming.
Though my brown sugar bacon wasn’t as good as West Egg’s (they had visible and crunchy sugar crystals on the ends of the bacon strips–broiling another sprinkling of sugar after baking maybe?), it came out really delicious. Instead of draining on paper towels, blot your sticky sweet bacon as it will want to stick to the paper.
